The days are getting a little longer, daybreak’s brush strokes fill the sky with dramatic red, the first Daffodils are struggling to pop their little crowns out and a choir of bird songs soundtrack the day. It can only mean one thing: Spring is upon us!!
Spring officially starts on 20th March, wordsmiths from Shakespeare to Wordsworth, have looked to spring as the season of new beginnings and it’s certainly putting a spring in our step over at Pourwell. Our love of the country garden and all things seasonal for March being the inspo for this month's box, as we celebrate the arrival of Spring.
This month's non-alcoholic cocktail is in anticipation of brighter days ahead spent in emerald green spaces immersed in all nature's glory.
The Pourwell Spring Watch is here - a crisp, refreshing drink, combining botanical flavours to temper our longing for Spring. This serve can be done two ways. One with a garden top of rosemary and cucumber notes, another with a violet blossom top for some floral colour!
Our hero non-alcoholic spirit of the month is the bright and zingy Bax Botanicals Verbena. An invigorating blend, bursting with botanicals, Bax Verbena flavour profile is bright, and bold with herbaceous notes of lemon thyme, mint & green tea.
Based in North Yorkshire, Chris and Rose Bax (above) have over 30 years experience of teaching and consulting to the food industry, focussing on ways to use wild ingredients and culinary herbs. They are now using all their skills and experience to distil a secret recipe of herbs, roots, berries and flowers to create alcohol-free spirits with layers of beautifully complex flavours.
In their quest for sustainability they have tracked down organic, fair traded, wild herb farmers and it is with these that they created the alcohol- free drinks they produce today. Bax is proudly designed by nature, quite literally as even the labels are made from sugar cane waste material. Bax have used their expertise and experience in the world of botanicals to craft a beautifully complex and concentrated non-alcoholic spirit. Bax has been recommended by Vogue, Cosmopolitan, Glamour, The Telegraph, Decanter and the BBC Good Food Guide.
To complement the gorgeous Bax Verbena, we are suggesting two different serves for you to try for flavours of Spring.
- Glass: Collins or Copa
- 60ml: Bax Verbena Spirit
- 5ml: Mint Syrup
- 60ml: Garden or Violet Blossom tonic top
- Garnish: Rosemary and Juniper berries
- Fill the shaker with a generous amount of ice, spirit, mint syrup and shake until cold.
- Pour and top with tonic water to taste, garnish with a cropped rosemary sprig and a few juniper berries.
One suggested serve is with Folkingtons English Garden tonic water, which is made using herbal botanicals found in the typical English garden, cucumber, rosemary, mint and quinine bark.
The other is Violet Blossom tonic from Artisan Drinks Co. Violets are seasonal in spring and add a pop of floral colour to match this tonic’s vibrant bouquet of violet, elderflower and apple blossom to awaken the palate.
So much so that the Pourwell taste panel was divided over which tonic worked best, so we decided to give our customers the chance to try both, what will be your fave?!! Mixed with the Bax Verbena, a little Payne & Son’s vegan alcohol-free mint syrup softens and sweetens this complex mix of flavours.
It’s a taste of the wild this month so as the Surprise Taster we are featuring Nuisance Wild Nettle soda. Pourwell absolutely love this soda a really grown up non-alcoholic drink perfect for food parings.
Nuisance was born in the depth of the Cotswolds, where founder Hugo and his mother spent their summers together in the great British countryside; picking stinging nettles in order to create a delicious and refreshing nettle cordial. Years later, Hugo, now in Edinburgh, launched Nuisance in order to champion and celebrate the great outdoors and the ingredients so often found on our doorstep; creating premium, botanical-based soda mixers.
We also have savoury snack pairings from Piper Farm Rosemary & Thyme crisps and Two Farmers with their Woodland Mushroom and Wild Garlic crisps for a distinctive taste of the English countryside. Wild edibles and foraging have made a real comeback among culinary enthusiasts. Two Farmers use 100% compostable packaging and use no artificial flavours colours or preservatives are gluten free, and suitable for vegans.
